Hi All ,Just a quick blog today after a very busy weekend in Cork and Dublin .We had two pigs on a spit in the lovely county of Cork and one pig on a spit in Blackrock in Dublin. It really is picking up now for the Summer months which is great as with every bookings there is a diferent voice and person at the other end, who wants the best for there day or familys day like Jennifer in Blanry who had her childs Communion but just for once wanted to enjoy it with her family and friends or Ian who organsised a Stag but wanted all his mates together with no running around and gathering them ,He got us to have a stag with a difference or Georgina who had a party but like Jennifer wanted not to be over the oven and wondering will it all come good .They all brought us in to take that stress away and let them focus on the right things in life , these moments don't come around a lot in life and they wanted to engoy that moment . That's what I like about the Whole Hog that we give that to them and you can see by there faces that it was worth it, as all of them went and had a great time with there family and friends and to be honest isn't that really what it's all about .

Hi guys ,

It was hell for leather but great fun and everyone had a great time ,Hi to all the familys we cater for ,The Walshes from dublin with the pig on the spit, Carrols from Wicklow with the BBQ and the Halveys in Limerick with the pig on the spit and the BBQ. .On top of this an after Wedding party in Castletownbere with the pig pig spit and BBQ,Wow what a part of the Country,Co Cork is amazing. To Henry and Sara ,congratulations and have a wonderful life together as a married couple We wish you thebest here from the Whole Hog team. Slan , John . Top tips for your BBQ .
With the sun coming out and the heat finally coming out ,the mind turns to outdoor catering which we here at the Whole Hog,Pig on a Spit ,BBQ know a lot about. Just for the guys that need a couple of pointers here is some advice . Always cook in a sheltered area ,this helps with the cooking time ,your flame is more controlled and you feel more incontrol of the cooking process. Alway keep your food meats refridgerated for as long as possible and take out in small batches, the last thing you want is raw meat in the heat for long periods of time. Always make sure the food is cooked .don't be shy in cutting into the meat to see if the juices run clear and there is no pink bits .It's better for you guests to wait a little bit longer rather than feeling bad or worse because of your cooking .Use a temp probe very easy to use and takes the gussing away . Give yourself plenty of time ,if you feel under pressure ,its no fun and that's what a BBQ party is all about. You don't need a load of huge tips as a BBQ is all about having fun with your family and friend so enjoy and the outside catering Hi All,
Started our first pig on the spit ,bbq of the season on Sat night in Co Limerick, just a short drive this time .It was a 21st with lots of happy adults engoying the party and us there to take the hassle of the food away from the happy parents and I think more inportantly the food clean up afterwards,I think I'm getting to old as I really couldn't make out any of the music that was been played that night!!! ,Anyway ,the pig on the spit was served inside the house because of the elements this night, with the roasted potatoes and salads. everyone enjoyed ,had a couple fo drinks and the slow roasted pork and away they went on a bus into Limerick ,for I'm sure another couple of drinks in the Limerick bars and nightclubs ,for me I got home and had a nice cup of tea, told you ,getting old. cheers, Slan go foil, John Hi all ,
Just back from a Wedding tasting day down at Blackwater Castle in Co Cork ,which for a wedding venue ,I don't think you can get much better. We went away from the pig on the spit for this one as our clients wanted something different so we put together a bespoke wedding menu for them ,which had ,canapes ,crab and melon starters, slow roasted lamb shank ,baked fillet of haddock, smoked salmon crust and dessert plate to die for . If our clients want something more ,we are happy to give it to them and what a perfect place to have there wedding but in ,blackwater castle ,nested in castletownroache , Co Cork .With the owners Patrick and Sheila always on hand to make every brides day a special day to remember. What bride wouldn't want to have there wedding in there very own castle and for the men ,there is an outdoor pursuit center, try the zip line through the river Awbeg. It's all there ,something for everyone at the blackwater Castle in Co Cork. Hi all ,
